Another Raw Pie: Chocolate Mousse/Strawberry

I recently bought another raw "cook" book: "Raw Food Made Easy" by Jennifer Cornbleet.  It's published by Book Publishing Co. in Tennessee.  I already had this particular book, but the publishing company offered to send me any books I wanted to review here.  I will be reviewing the books they sent me sometime over the next month (Vitamin D:The Sunshine Vitamin and Sweet Utopia).  But since I already had this book, I thought I'd give a quick review.  

First of all, this book doesn't require much more than a blender and/or food processor, which is great, because I can't afford a dehydrator.  I like how she gives you a list (in the beginning of the book) of basic "kitchen staples" and equipment you'll need.  She also explains how to soak nuts and seeds, which is a big part of the raw food diet.  Now there's only a very small section of pictures in the middle of the book.  I always like my cookbooks with tons of color pictures, so that would be my only negative comment.  Yesterday, I tried my first recipe: Chocolate Tart with Strawberries.  Wow!  It's so good. It basically combines two of her other recipes in the book, her Almond Crust, and her Chocolate Mousse.  This is the first time I've made chocolate mousse out of avocados and it was even kid-tested last night with much success! Overall, this looks like a great book and I'm looking forward to trying more recipes. I only wish it had more pictures.

Farmer's Market Stuff and Strawberry Pi(e)!

Happy Pi Day!

I only realized after I made the pie today, that it was Pi day :)

First, here's what I got at the market yesterday: collard greens, oranges, grapefruit, kale, strawberries, hydroponic tomatoes, beets (that's a new one!), turnips, shiitake mushrooms, lettuce, and green onions.

And now for the recipe of the day: Raw Strawberry Pie.  


Such a great day for it....72 degrees, the sun is shining, and what do I have in my fridge? Yup, Louisiana Strawberries from yesterday's market.  So what a perfect day to make this pie.  And it was pretty easy too.
I had about 2 pints of strawberries, which maybe wasn't quite enough, but I made it anyway.  My crust was pretty thick, so maybe next time I'll use fewer almonds.  It only uses FOUR ingredients! Can't go wrong with that: almonds, dates, strawberries, and lemon juice. Only thing I had to do was add a couple of tablespoons of water to the crust in the food processor to help it stick together. And I just ate a piece......wow! Delicious :)  It's strawberry season (at least here)! MAKE IT!

Post Thanksgiving market


Well, two of my markets were closed today, so I had to go the other one. It was ok, but I didn't get very much. My stash this week: kale, louisiana strawberries, tomatoes, 7-grain bread.

Yay, kale.  I love it.  And it goes great in my monk bowls (which we're having again tonight).  The folks at Voodough bakery won't be at this market anymore....I bought one of her breads.  I used to buy her orange cranberry whole wheat scones, which were absolutely amazing!  But, alas, she didn't have any today.  Best of luck to them...


First of the season Louisiana Strawberries!!!  Wow.  And they're sooo good.  Can't wait for the rest of the season....I think the Spring is strawberry season here.  The tomatoes were a bit green and hard, but that's ok.  I roast them anyway....and I don't think we're going to get tomatoes for too much longer down here....sigh...what will I do when they're out of season??


On to a great snack recipe! Microwave potato chips! Yup, so easy and so tasty.  You can get the recipe from the FatFreeVeganKitchen, along with a few other snacks that I haven't tried yet. Enjoy.
